Spelt Pizza Dough

Today my sister and I tried our hands at some wheat free pizza dough. We use this recipe and added flax seeds and Salba.  The dough didn't really"behave" the way wheat dough does, it was really tough to knead and roll onto the pan.

We loaded it up with veggies and a bit of cheese ( to kept the GI lower) and popped it in the oven.

We were both surprised at how quick it was to make and bake, only about 30 minutes!

Overall the pizza was pretty good, although next time I think I will make it a thinner crust.
